It is optimal in applications where fatty acids can interfere with functionality such as hormone, cholesterol, or nucleic acid assays and is the preferred choice for protein fillers or bases so fatty acids won’t also be included. Fatty-acid free BSA is also highly recommended for enzymatic assays due to there being no EDTA.
